I found this recipe on Pinterest a while back and I am obsessed. I’m not really a banana kinda girl, I like them as green as can be or not at all.. but banana cake is different right? I love it because it’s so easy to make, sugar-free which is important in my diet at the moment,  and you probably have all of the ingredients floating around your cupboard.

You will need:

  • 6-7 overripe bananas (as many as you can find really)
  • 1/4 cup vegetable oil
  • 2 free range eggs
  • 2 cups flour (alternatively make your own with ground oats)
  • 1 tbsp vanilla extract
  • 1tsp baking soda
  • pinch of salt


To make:

  1. Set oven to 180 degrees C – lie bananas out on baking tray and bake for 20 mins until caramelized
  2. Let them completely cool and then mash them
  3. Grease loaf tin and set to one side (turn the temp down on over to around 165 C)
  4. In a mixing bowl whisk together the oil, bananas, and the juices from the baking tray, eggs, and vanilla
  5. Then whisk in the flour, baking soda, and salt and combine well
  6. Pour the mixture into the tin and bake for 1 hour – check it is cooked by inserting a knife / skewer
